    How a workhorse vegetable became a darling of the culinary world.In a world in which it’s hard for a vegetable to get a break, cabbage is winning.Cabbage has been a global culinary workhorse for centuries. (China grows the most; Russia eats the most.) It has fed generations of American immigrants. But now, a vegetable that can make your house smell like a 19th-century tenement has become the darling of the culinary crowd.In the words of my mother-in-law: Cabbage, who knew?Like so many American food trends, fancy cabbage dishes first started turning up in restaurants on the coasts a few years ago. But they are fast spreading across the country. One chef has compared this cabbage mania to the hoopla over bacon in the 1990s.In Denver, Sap Sua sprinkles a charred cabbage wedge with anchovy breadcrumbs. Cabbage is bathed in brown-butter hollandaise at Gigi’s Italian Kitchen in Atlanta.     Former Horses Chef Opens Frog Club in New York

    Liz Johnson has taken over the former Chumley’s space after her messy split with her former co-chef, Will Aghajanian.As would-be diners approached a nondescript door on a placid block in Greenwich Village on Wednesday night, they were stopped short by a tall, lean man wearing a black fur hat and red carnation boutonniere. He pressed stickers over the lenses of their phones. No photography was allowed, he insisted.As they complied and disappeared through the door, the block fell silent again.Inside, silence was scarce. It was the opening night of Frog Club, the first restaurant involving the chef Liz Johnson since the very public implosion of her marriage to Will Aghajanian, with whom she ran the acclaimed Los Angeles restaurant Horses.Occupying the historic space formerly home to Chumley’s, Frog Club has been veiled in secrecy. Only a 12-minute stiltedly lo-fi YouTube video announced its official opening, and a sparse website offered just an email address for requesting reservations.     Who Created Butter Chicken? India’s Great Curry Clash.

    A court has been asked to solve a bitter dispute between two families who have very different accounts of the origins of a dish beloved around the world.In 1947, two men, both named Kundan, fled Peshawar during the bloody partition that carved Pakistan out of British India. They landed in Delhi and soon became partners in a restaurant called Moti Mahal serving food from the Punjab region.On this much their descendants agree. Where they diverge is on the question of which of the men should go down in culinary history.The two families both say that it was their own Kundan who invented butter chicken — the creamy, heavenly marriage of tandoori chicken and tomato gravy beloved everywhere north Indian food is served.     A Red Velvet Bistro in an Istanbul Villa

The brand’s Legacy Collection, which comes out on Feb. 1, revives five of Lauder’s creations with the help of Frédéric Malle (whose perfume brand was acquired by the Estée Lauder Companies in 2015) and the perfumers Anne Flipo, Carlos Benaïm and Bruno Jovanovic, all of whom have worked with Malle on previous fragrances. During an interview inside Lauder’s well-preserved office near Central Park, Malle explained how he retooled the scents using more modern fragrance-making techniques. He noted that, in Lauder’s day, perfumers combined base scents that were “like premixed mini-perfumes” to create a final fragrance. “They contained things that weren’t necessary and created background noise,” Malle said. To update the formulas, any nonessential ingredients in those bases were stripped away — “it’s like cleaning up,” he said. The new collection has notes that range from fresh and herbaceous to musky and sweet. Azurée, initially released in 1969, evokes dry Mediterranean shores with herby notes like basil and tarragon as well as jasmine, spicy cardamom, bergamot, and cumin, which Malle amplified in his edition. For White Linen, a classic floral bouquet of rose and jasmine, Malle used pure labdanum, an ambery resin from the rockrose plant, which wasn’t available when the scent debuted in 1978. Knowing, a seductive scent from 1988, “contained a little bit of the Muzak of the ’80s,” Malle said. The modernized version is a fruity chypre with raspberries, black currant, rose and patchouli. Right: a dish of gochujang-flavored steak tartare served with a dollop of anchovy mayonnaise and a rice cracker.Ali Yavuz AtaWhen Debora Ipekel, a former music business executive, and her husband, Cenk Debensason, a classically trained chef, first came up with the concept for a new restaurant venture in their hometown, Istanbul, they wanted to create an experience that would encompass both their worlds. “Hospitality extends beyond serving great food — it’s about creating an atmosphere that reflects our identity,” says Ipekel. Arkestra, named after the Sun Ra Arkestra, the avant-garde jazz group formed in the 1950s, opened in September 2022. Inside a sprawling villa in the neighborhood of Etiler, a wood-paneled dining room on the ground floor serves Debensason’s varied menu of dishes like tuna sashimi with sushi rice ice cream and a seasonal mushroom risotto. On the next level is a bar called Listening Room which features lounge seating, low cocktail tables and an extensive library of vinyl records. Drawing on her career in music, Ipekel curates late-night sets alongside guests such as the Chicago disco legend Sadar Bahar and the Turkish DJ Barış K. “We want the music to be eclectic, timeless, and soulful — similar to the food we serve,” she says. This month, the villa housing Arkestra welcomed the couple’s new bistro, Ritmo. After years spent honing her style while also working as a curator and art writer, she’s lately made waves with her vibrant, almost spiritual oil paintings of urns, columns, jaunty hands and theater curtains framing ombré skies and conspicuous moons. Her new pieces, which will soon make up a solo show at Red Arrow Gallery in Nashville and feature in the inaugural group exhibition at König Galerie’s Mexico City outpost, continue in this vein while expanding her visual lexicon. On one canvas, Weiner has painted an all-encompassing aquamarine spiral that moves toward a tiny half-moon at the center; hung next to it at Red Arrow will be its fiery twin — a mirror-image spiral rendered in a rusty red. (A number of the other works are symmetrical all on their own and, fittingly, the name of the solo show, “Never Odd or Even,” is a palindrome.)     Can Maxim’s Restaurant in Paris Reclaim It’s Cool After 130 Years?

    That’s the hope at the restaurant Maxim’s in Paris, which recently started a new chapter after 130 years in business.Anya Firestone’s job as a luxury tour guide in Paris has brought her to many rarefied corners of the city. But only recently did she do something that countless locals and visitors have done over the last 130 years: Book a reservation at Maxim’s, the storied French restaurant that opened in 1893 and has counted Jacqueline Kennedy Onassis, Margrethe II of Denmark, Jean Cocteau, Jane Birkin and Man Ray among its patrons.“The place was packed,” Ms. Firestone, 35, said of the night she ate there in late November. “There was energy — the ghosts of Maxim’s are probably happy.”Ms. Firestone, who has lived in Paris off and on since 2010, hadn’t tried to dine there sooner because the restaurant fell “off my radar,” she said, partly because she wasn’t aware if it was still functioning as a restaurant. She was not alone in that perception.“Many people, even most, did not realize it was open as a restaurant,” said Pierre Pelegry, a director at Maxim’s who has worked there for 27 years and was hired by Pierre Cardin, the French fashion designer, after he bought the restaurant in 1981.The focus at Maxim’s in recent years had shifted to private events, Mr. Pelegry said, and for a while it was open to diners only from Wednesdays through Saturdays. It resumed daily bookings in November, two months after the Paris Society, a French hospitality group, took over operations as part of a deal with the Cardin family. It was 20 days before the midterm elections, and Mr. Padilla, a pastry chef, was on his way out of the headquarters of the Culinary Workers Union 226.The meeting he’d just attended was part business session, part political rally. There were energizing chants (“2-2-6!” “We vote, we win!”) and speeches from politicians pleading for the support of the 400 assembled servers, cooks, bussers and guest room attendants. Like Mr. Padilla, all would spend the rest of the day knocking on voters’ doors in a city that has long been an electoral pivot in this swing state, and beyond.Even in the world of organized labor, hospitality workers have never been much of a force. But campaign visits to the union hall by presidential candidates — Barack Obama, Hillary Clinton, Joe Biden — over the years attest to this local’s unusual brand: political power.The source of that power is the union’s 60,000 members, who work in the restaurants, bars, casinos and hotels that drive the economies of Las Vegas and Reno. Thanks to union-negotiated contracts, they enjoy job security and financial stability that are uncommon in hospitality businesses. Wages for members of the local average $26 per hour, according to union officials, and rise every year. But its diverse membership includes constituencies that political professionals believe hold the keys to power. About 55 percent of members are women, and 45 percent are immigrants. The average member is a 44-year-old Latina.Canvassing expertise is another big advantage. The union’s army of hospitality workers has already knocked on more than 750,000 doors this campaign season, according to union leaders, who believe they can tip the election in favor of the largely Democratic slate they’re currently supporting. One strike, which began in 1991 at the Frontier casino-hotel, lasted more than six years.Jim Manley, a political consultant who was an aide to former Senator Harry Reid, said the union became impossible to ignore in 2008, when it helped Mr. Obama beat John McCain by 12 percentage points in Nevada, even though Mr. McCain was from neighboring Arizona.Today, the hospitality industry is Nevada’s biggest private employer, and union members are entrenched in the state’s power structure. Jacky Rosen, Nevada’s junior senator, is a former union member and Caesar’s Palace server.Next week’s elections will be the first since the death last December of Mr. Reid, a political brawler whose close relationship with the union was mutually beneficial. “The question is whether the Reid machine is as effective as it was in the past,” Mr. Manley said.To win in a midterm election that seems to favor Republicans, Nevada Democrats need the union to drive up Democratic voter turnout in Clark County, which includes Las Vegas, said Jon Ralston, a veteran Nevada political journalist.“It’s that simple,” he wrote in a text message, adding that the union “has the bodies and experience to do it.”Mr. Padilla started as a pastry chef at Treasure Island, a casino and hotel, nearly 30 years ago, after moving to Las Vegas from Flagstaff, Ariz. He became interested in union work when his brother-in-law, an iron worker, took him to a rally. “Turned out it was Culinary that was holding this rally,” he said. “I was in awe.”In the past two years, Mr. Padilla has spent more time canvassing than baking bread and pastries. In the run-up to the 2020 elections, when he was laid off from his job because of pandemic shutdowns, the union paid him to canvass door-to-door.He then moved temporarily to Georgia, where he joined other hospitality workers helping Raphael Warnock win a tight runoff election that gave Democrats a one-vote Senate majority. It was in the district of Representative Steven Horsford, a former head of the Culinary Academy of Las Vegas, a school for hospitality workers run by the union.One voter, Deborah Gallacher, told Mr. Padilla that she didn’t know yet if she would vote this year, but that Mr. Horsford “has knocked on my door. I voted for him every time he’s been on the ticket.”Mr. Padilla responded, “It’s time again.”He worked alongside Rocio Leonardo, 30, a room cleaner at Aria Resort & Casino. Ms. Leonardo, who moved to Las Vegas from Guatemala as a child, also campaigned in 2020, although she is not a citizen and can’t vote. “I do this because it feels like something positive for my children,” she said.Ms. Rocio approached a house with Marine Corps and prisoner of war flags hanging from the garage. She knocked twice on the door, as dogs barked ominously. The woman who finally came to the door was on a phone call and looked upset — until she saw Ms. Rocio’s union T-shirt.“I’m Culinary, too,” she said. “You’ve got my vote.”Walking away, Ms. Leonardo marked the woman as “not home” in the voter database on her smartphone, so a campaign worker would return to make sure she voted.Such persistence, while often tedious in practice, has delivered results.Mr. Padilla canvassing with Rocio Leonardo, a hotel room cleaner from Guatemala who can’t vote. “I do this because it feels like something positive for my children,” she said.Saeed Rahbaran for The New York TimesElecting allies to public office strengthens the union’s hand when negotiating on behalf of its members, said Ted Pappageorge, the union’s secretary-treasurer. “We don’t do union stuff so we can win in politics,” he said. “We do politics so we can win in union contracts.”The union is especially motivated this election cycle, Mr. Pappageorge said, because the five-year contracts with employers for the vast majority of its Las Vegas members will expire next year. “We’re going to have really difficult negotiations,” he said. “We think we may have strikes.”The union is also pushing local politicians to support a program to combat the fast-rising cost of housing. Last year, Ms. Leonardo said landlords raised the monthly rent for the house she shares with her husband and four children to $1,400 a month, from $900.“I thought it was a typo,” she said.Mr. Padilla, a father of three, brings up housing costs with as many voters as he can.
