    A Recipe for Perfect Broiled Shrimp Every Time

    Cooking the tiny crustaceans on a sheet pan can be tricky. This vibrant dish, full of golden-edged zucchini, from Melissa Clark changes that.Some sheet-pan meals are so simple you could almost cook them in your sleep. Throw some chicken legs and sturdy root vegetables on a pan, sprinkle with salt and maybe herbs or spices, then drizzle with oil and stick it all in a hot oven. About 40 minutes later, the dark meat is reliably juicy, the vegetables golden and bathed in rendered chicken fat, and both take about the same amount of time. It’s an adaptable meal that would be hard to get wrong.Recipe: Roasted Zucchini and Shrimp With Za’atar YogurtOthers take more finesse. This combination of shrimp and zucchini is one of them.I could just picture it, a pan full of golden-edged, green-skinned zucchini dotted with crescents of tender, coral-hued shrimp and seasoned liberally with za’atar and lemon zest. A garlicky, creamy yogurt sauce spiked with even more za’atar would add a tangy, zippy flourish right at the end.But first, I had to work out the timing of shellfish versus the vegetables.The sticking point is that, unlike forgiving chicken legs and roots, which have a relatively wide window of doneness, shrimp and zucchini can be finicky. Leave shrimp in the oven for even a minute too long, and they will go from succulent and plump to rubber ball bouncy. Zucchini, on the other hand, with its high moisture content, needs plenty of roasting time for the juices to condense, then caramelize. How to get them to cook on the same sheet pan in the easiest possible way?In my first round of testing, I started with the zucchini in the oven, letting it roast until sufficiently browned, which takes about 35 minutes. Then, I added the shrimp for another couple of minutes. This worked pretty well, but not consistently enough. Sometimes the shrimp at the edges of the pan had curled and toughened by the time the ones in the middle cooked through.Switching to the broiler after adding the shrimp made all the difference. The heat from above seared them quickly and evenly until they were all perfectly cooked, and it also amped up the golden color of the zucchini, making it richer and more intense. It was well worth the extra step.Although this recipe does involve more moves than, say, sleepwalk chicken and vegetables, it’s still blissfully easy.     At the P.G.A. Championship, Club Pros Get a Chance to Play

    They have the opportunity to play their way into the field. Michael Block did it last year and impressed the sport by finishing 15th.Michael Block, the club professional from Southern California, electrified the crowds at last year’s P.G.A. Championship at Oak Hill Country Club in Rochester, N.Y., holding his own against the best touring professionals in the world.But after making the cut, his first hole didn’t bode well for a successful weekend.“I had 25 feet — the easiest two-putt in the world — and I three-putt it,” Block recalled last week. “I started to think, ‘Oh no, this is how it’s going to go today.’ As we’re walking off the green, Justin Rose puts his arm around me and said, ‘Let’s settle in, Blockie, and have a good day.’ For him to say that?”Rose, a major champion and Ryder Cup stalwart, was like so many other people at last year’s P.G.A.: supportive of a magical, if improbable run.Block, 46 at the time, did settle in and eventually finished tied for 15th, which got him an automatic invitation into this week’s P.G.A. Championship at Valhalla Golf Club in Louisville, Ky. But more than the highest finish for any country club pro in the modern era of the P.G.A. Championship, he captivated the audience, inspired other club pros and earned the respect of touring pros who saw how well Block, who had been running his pro shop a week earlier, could play.“Watching Michael Block do what Michael Block did gave all of us this inner sense that it’s doable,” said Matt Dobyns, the head golf professional at the Meadow Brook Club in Jericho, N.Y., who will be making his sixth start in the P.G.A. Championship this week. “That’s part of the challenge for us — believing you can do it. I’ve played with Michael.     Local Guys Bought the Valhalla Club, and Now They’re Hosting a Major

    A group of Kentucky businessmen are trying to give the P.G.A. Championship a Louisville feel, complete with nods to Churchill Downs.The quality of a major championship venue is defined by its champions, and Valhalla Golf Club, the site of this week’s P.G.A. Championship in Louisville, Ky., has a list of past winners that stands out at every level.Tiger Woods won the 2000 P.G.A. Championship at Valhalla, and Rory McIlory won it there in 2014. Hale Irwin won the 2004 Senior P.G.A. Championship at Valhalla, and Tom Watson won it there in 2011. At the 2008 Ryder Cup, the United States squad, led by Paul Azinger, beat the European Team.Even on the junior side, the course has hosted elite players. Akshay Bhatia, who at 22 has two PGA Tour victories, won the 2018 Boys Junior P.G.A. Championship there. Anna Davis, now 18, won the 2021 Girls Junior P.G.A. Championship at Valhalla and went on the next year to win the Augusta National Women’s Amateur.What its new owners, a group of Kentucky businessmen who bought Valhalla in 2022, said it didn’t have was a club presence to go with its illustrious championship history. So when the P.G.A. of America, which runs the championship, decided to sell Valhalla, the new owners moved in to change that.“We couldn’t let it go to an out-of-town golf management firm,” said David Novak, the co-founder and former chief executive of Yum Brands, which owns Kentucky Fried Chicken, Taco Bell and Pizza Hut. “We felt they’d be more interested in making money than building Valhalla’s reputation.”Rory McIlory won the 2014 P.G.A.     The Breathtaking Shots of the P.G.A. Champion Gary Player

    He won the P.G.A. Championship twice and his 150-yard shot in 1972 is still talked about. But Player said he was proudest of one he hit at the 1968 British Open.Gary Player of South Africa, a nine-time major winner, captured the P.G.A. Championship in 1962 and 1972 and made an impressive run for a third crown in 1984 at age 48, finishing second to Lee Trevino.In 1972, at Oakland Hills Country Club outside Detroit, Player rebounded from bogeys at 14 and 15 to pull off one of the more memorable shots in tournament history: a 9-iron approach on No. 16 from about 150 yards that went over trees and a lake to within about four feet of the pin. He converted the birdie putt and went on to prevail by two strokes.With this year’s event beginning on Thursday at Valhalla Golf Club in Louisville, Ky., Player, 88, recently reflected on what the P.G.A. meant to him.The following conversation has been edited and condensed.Was the shot at 16 the greatest one you ever hit?No. The greatest shot I ever hit was in the [1968] British Open [at Carnoustie in Scotland.] The wind’s blowing like crazy and I’m playing with Jack Nicklaus.     How Wild Rice Forecasts Climate Change

    Manoomin, a crop vital to the Indigenous peoples of the Upper Midwest, has been threatened in recent years. But careful stewardship is helping to bring it back.Dwayne Jarman is often tinkering with the wild rice machines in his garage in this tree-lined suburb of Detroit. He has threshers to crack the hulls and winnowers to blow the chaff. He smiles and flips the switch. It’s time to process last summer’s harvest from his Anishinaabe homeland near Traverse City in Northern Michigan.“I want to do the rice all year round because I’m trying to reconnect to the things that matter,” said Mr. Jarman, a veterinarian. When he’s not working his day job, he harvests hundreds of pounds of rice, which he shares with friends and family. For him, harvesting and processing the rice is not only a labor of love, but also a preservation of an Indigenous food under constant environmental stress.Recipe: Wild Rice PorridgeClimate change and human impact have significantly depleted the natural abundance of manoomin, the “good berry” as wild rice is known in Anishinaabemowin, an Indigenous language also known as Ojibwe, and protecting it is synonymous with preserving cultural identity.Wild rice is sacred and central to the creation story of the Anishinaabeg, a vast cultural and linguistic collective that includes the Ojibwe, Odawa and Potawatomi.     East Texas, Already Soaked, Prepares for a ‘Nightmare Scenario’ of More Rain

    Some places in Texas have seen a year’s worth of rainfall since January.In a densely forested region of East Texas called the Piney Woods, rivers are still in moderate to major flood stage after recent weeks of heavy rainfall. Now, the region is preparing for what forecasters are calling a “nightmare scenario” with another round of excessive rain, which could lead to more considerable flooding on Thursday into Friday morning.“It’s just an insane amount of rain,” said Jimmy Fowler, a meteorologist at the National Weather Service in Houston, “that just seems to keep falling over the same area.”This week’s forecast calls for an additional three to five inches of rain in the same part of Texas, southeast of Dallas and northeast of Houston, where “considerable rainfall amounts have occurred this month,” forecasters said.“Over the last 14 days, portions of eastern Texas have received five to 10 inches of rain, with localized amounts as high as 15 to 20 inches,” Marc Chenard, a senior forecaster with the Weather Prediction Center, an arm of the National Weather Service, said Tuesday afternoon. “This is 400 to 600 percent the normal rain for this two-week period.”

    This week, some isolated areas could see six to 10 more inches, Mr. Chenard added. And it will fall on saturated ground. Since January, some towns, like Huntsville, Texas, have already exceeded the 51 inches of rainfall they would typically receive in an entire year.While some of the river gauges that are in flood stage now are still short of the record-high levels seen during Hurricane Harvey in 2017, the past few weeks have been a compounding onslaught of heavy rainfall, especially across the Piney Woods region, Mr. Fowler said.Because the ground is so saturated, Mr. Fowler said, it would most likely only take a storm producing one to three inches of rain in an hour to cause flash flooding.Wednesday is supposed to be relatively dry, but it won’t be enough time to dry out the ground before Thursday’s rain. If anything, the water that evaporates will just add to the moisture in the air, helping fuel the rainfall on Thursday.Forecasters with the Weather Prediction Center warned that if the forecast computer weather models continued to show the “bullseye” of excessive rain lingering over the already flooded region, then they would most likely increase the probability of flash flooding to a higher level.Confidence is high among forecasters that rain will drench the region again Thursday. However, there were a few outliers in the computer models Wednesday that showed the rain farther north, which would be good news for the waterlogged Piney Woods.The flood concern will move east across the South as the multiple waves of storms move over Louisiana from Thursday into Friday. By the start of the weekend, East Texas may begin to dry out, but rounds of rain will pound Southern Mississippi and Alabama, which have also been stuck in a similar rainy pattern recently. More

    ‘Death Becomes Her’ Musical to Open on Broadway This Fall

    The musical comedy, which is now running in Chicago, stars Megan Hilty and Jennifer Simard. It is based on the 1992 film.“Death Becomes Her,” a musical comedy based on the zany 1992 film about two warring women who turn to a magical potion in their quests for eternal youth, will transfer to Broadway this fall.The musical is now in previews at the Cadillac Palace Theater in Chicago, where it is scheduled to open on Sunday and to run until June 2.The Broadway production is scheduled to begin previews on Oct. 23 and to open Nov. 21 at the Lunt-Fontanne Theater, where a revival of “Sweeney Todd” closed this month.The show stars two gifted musical theater comedians, Megan Hilty, best known for television’s “Smash,” opposite Jennifer Simard, last seen on Broadway in “Once Upon a One More Time.” They will play roles originated on film by Meryl Streep and Goldie Hawn.The stage production will also feature Christopher Sieber (whose comedy chemistry with Simard was last seen on Broadway in the 2021 revival of “Company”) as the man they both desire, and Michelle Williams (of Destiny’s Child) as the potion purveyor.The “Death Becomes Her” musical is being directed and choreographed by Christopher Gattelli, who won a Tony Award for choreographing “Newsies”; the book is by Marco Pennette, who has written and produced television shows including “Ugly Betty”; and the score is by Julia Mattison and Noel Carey, who have written and performed in a variety of comedy projects.The lead producer is Universal Theatrical Group, which is the stage division of the movie studio behind the “Death Becomes Her” film.     Antony Blinken plays Rockin’ in the Free World in Kyiv bar – video

    The US secretary of state, Antony Blinken, performed Neil Young’s 1989 Rockin’ in the Free World at a bar in Kyiv during a visit on Wednesday night. He was called on stage by the frontman of Ukrainian rock group 19.99, before he played guitar. Young’s song was written in 1989 after he was denied an opportunity to perform in the Soviet Union and was released as the Berlin Wall came down. The song choice underscored Blinken’s support for Ukraine as Russia steps up attacks on the city of Kharkiv
